Kitchen Concoctions: Pumpkin Brownies

A few weeks ago, a recipe for pumpkin brownies on Pinterest caught my eye, and I decided at some point I would have to try out this little recipe.

I think I’ve mentioned before that I have a sweet tooth— and a weakness for anything with chocolate in the recipe, so naturally I was intrigued about this combination and how it would turn out.
In the past, I’ve made chocolate zucchini cake (which is definitely not a healthy snack, even though it has vegetables mixed in), and it is always a crowd pleaser.
The instructions for the brownies are super simple: just a can of pumpkin puree and a box of brownie mix– no eggs, oil, or water necessary.
Once they were baked, I sampled a small piece while it was still piping hot from the oven, and was pleasantly surprised with the flavor. I was a little worried that the pumpkin would dominate, but it was just a subtle hint.
I debated saving them to bring into work and share with my co-workers, but then changed my mind and decided to save them for my friends and any potential visitors that stop by my apartment this weekend.
Maybe next week I’ll whip up a batch to take to work. But maybe not.
This recipe is definitely one to keep in mind for the future, and one of the few successful things I’ve tried after discovering them on Pinterest.
It’s always fun to experiment a little in the kitchen, and when things turn out better than expected, it just makes the experience even better.
